Pecan Snowball Cookies

Yield: 12-16 cookies

Ingredients:

  • ½ c. Lekkco

  • 1 c. pecans, chopped

  • ½ c. powdered sugar

  • 1 c. butter, room temperature

  • ½ t. Vanilla

  • 2 ½ c. flour

  • ½ t. Salt

  • About ½ c. powdered sugar, for dusting

 

Directions:

  1. On a tray or plate with parchment paper, scoop out ½ teaspoon balls of Lekkco and freeze while you construct the dough, or until firm.

  2. In a large mixing bowl, beat together the butter and ½ cup of powdered sugar until combined. Add the vanilla and salt then mix until combined. 

  3. Add the flour and mix until just barely but not fully combined. Add the pecans and mix until just combined. Do not overmix.

  4. Preheat the oven to 350F and line a baking sheet with parchment, set aside.   

  5. Scoop out 1 ½ tablespoons of dough and add a ball of Lekkco. Cup the dough around the Lekkco and seal it with another scoop of dough. Roll into a ball and repeat with the rest of the dough. Bake for 12-15 minutes or until lightly browned. Let cool completely for about an hour.

  6. Toss the cookies in powdered sugar, serve and enjoy!
