Protein Bites

Vegan, Gluten Free

Yield: about 10 balls

Time: 10 minutes

 

Ingredients:

  • ½ c. coconut flour

  • ¼ c. almonds

  • 2 tsp. Chia seeds

  • 2 Tb. maple syrup or agave

  • 6 Tb. Lekkco

  • 2 Tb. peanut butter

  • 2 Tb. + 2 tsp. Amaranth, popped

 

Directions:

  1. In a food processor, combine all ingredients except the amaranth and process until all the ingredients and ground down and combined. Scrape down the sides as necessary.

  2. Add the amaranth and pulse until just combined. Avoid over-processing to maintain the popped amaranth kernels.

  3. Scoop out the dough and compress into balls, yielding about 10 each. Enjoy or store in an airtight container for 1 week.
