Peppermint Thumbprint Cookies

Yield: 16 cookies

Time: 1 hour 15 minutes



  • 1 egg

  • ¾ c. Lekkco

  • ½ t. Salt

  • 1 c. flour

  • 2 Tb. + 2 t. Lekkco, for filling

  • 1-2 t. Red and white striped peppermint candy, crushed 



  1. In a large mixing bowl, add eggs, ¾ c. of Lekkco and salt then mix until combined. Add the flour and mix until just combined. 

  2. Refrigerate for 10 minutes, but for no longer than 15 minutes. Preheat the oven to 350F and line a cookie sheet with parchment paper.

  3. Scoop out and roll about 1 ½ tablespoons of dough into a ball and place 2 inches apart. Dust your thumb with flour and use it to push an indent in the center of each cookie pretty deep but not deep enough to go through the cookie.

  4. Bake for 10 minutes and let cool completely. If the hole isn’t deep after baking, poke it again before it cools. Fill each indent with about ½ teaspoon of Lekkco and sprinkle on chopped peppermint as desired. Serve and enjoy!
