Double Chocolate Sugar Cookie Sandwich

Ingredients:

Chocolate Sugar Cookies-

  • 1 ¼ c. cake flour

  • 2 ¼ t. Baking powder

  • ½ t. Salt

  • ¼ c. butter, room temperature

  • ¼ c. + 2 Tb. sugar

  • ¾ c. + 2 Tb. Lekkco

  • ½ egg (whisk then half)

  • 2 Tb. milk

  • ½ t. Vanilla

  • More sugar for dusting

 

Chocolate Buttercream-

  • 3 ½ c. powdered sugar

  • 1 c. Lekkco 

  • 1 ¼ c. + 2 Tb. butter, room temperature

 

Directions:

Chocolate Sugar Cookies-

  1. Sift together the flour, baking powder, and salt in a mixing bowl and set aside.

  2. In a large mixing bowl, add the butter, sugar, and Lekkco and beat with an electric mixer until evenly combined. Add the egg and beat until combined, then add the milk and vanilla and beat until combined.

  3. Cover the dough and refrigerate for 30 minutes. Preheat the oven to 350F and line a baking sheet with parchment paper. 

  4. Scoop out about 1 ½ tablespoon size balls of dough and place on the baking sheet 4 inches apart on the baking sheet. It will be about 6-8 cookies per bake.

  5. Bake for 8-10 minutes and let cool completely.

 

Chocolate Buttercream and Assembly-

  1. In a large mixing bowl, beat together the butter and Lekkco until smooth, light and fluffy. 

  2. Sift in the powdered sugar and blend until fully combined, making sure to scrape the sides and bottom of the bowl.

  3. Spoon the buttercream into a piping bag and pipe onto the bottom of a cookie and sandwich with another cookie. Add sprinkles, if desired, serve and enjoy!
